The fluffiest pancakes

This morning I tried for the first time a pancakes recipe that I found in Youtube, I think in the video are explained a lot of ideas so I would like to write down all steps described in the video to be easier to follow. In this confinement I’m taking advantage of my free time during the weekend to cook to my family.


  • Flour 2 1/2 cups (around 12 pancakes using 170 ml cup)
  • Sugar 3 tablespoon
  • Salt 2 teaspoon
  • Baking powder 1 teaspoon
  • Baking soda 1 teaspoon
  • Egg yolks 2
  • Egg whites 2
  • Buttermilk 2 1/2 cups (it you don’t have it you could use whole milk and 2 or 3 tablespoons of lemon juice or vinegar, and just wait for 10 or 15 minutes more or less)
  • Unsalted butter 1 stick (around 150 gr)

Mixing dry ingredients

First dry mixture, put flour, sugar, salt baking powder and baking soda in a big bowl and whisk to combine all together, using a kitchen rod is perfect to mix these ingredients.

Mixing wet ingredients

In the wet mixture is needed to put butter milk first and then add melted unsalted butter, then add the two egg yolks and fold it until just combine.

Mixing all together

This is an important step add the buttermilk mixture to the dry ingredients and gently mix them, but it’s very important not overmix your batter, we could use a rubber spatula (see the link video below to watch how is the proper result). Once all is more or less mixed it’s time to add the egg whites and again mix gently.


Add butter when your pan is warm, to use butter is recommend than oil but this choice is on you. When the butter is completely melted turn the heat down to medium-low. It’s time to put a few of batter in the pan, we could use the same cup we’re using to measure our ingredients or any other recipient. When you start to see bubbles in the surface is needed to flip you pancake, and then just wait one or two minutes more and that’s it!

My conclusions

Thanks a lot to Tasty Youtube channel for this recipe we enjoyed our breakfast. The next time we are going to try a different butter, a lighter one (likely a vegetal one), but this is on your own.
